Ultimate 24-Carat Cake
½ c Water
2/3 C Vegetable Oil
4 eggs
1 can 8-oz pineapple in juice, undrained
`1/2 Chopped nuts1/2 Shredded coconut (I leave this out)
½ C. Raisins
1 container Betty Crocker Rich & Creamy cream cheese frosting
Oven 350. Grease bottoms (only) or use spray oil to prepare 2, 8 or 9” round pans. (I use a 13x9) with shortening and light flour/
In large bowl, beat cake mix, water, oil, eggs and pineapple (with juice) with electric mixer on low speed 30 seconds then med speed for 2 minutes, scraping bowl occasionally. Stir in nuts, Coconut (again I don’t use coconut in ANYTHING – lol) and raising. Pour into pan(s).
Bake 40-45 minutes until toothpick .. inse3rted in center comes out clean. Cool 10 minutes. Remove cakes from pans (run knife around the sides of pans will help get them out). Put on a rack and cool about an hour. On a serving plate, place 1 cake layer, rounded side down. Spread with about 1//3 cup frosting. Top with second layer rounded side up. Frost side and top oof cake with remaining frosting. – typed by kbz
