Sunshine Salad

This is one of my favorite foods, but I just never get around to making it -- I should as it's very good for you :) Betty Dotson, a cousin/genealogy pal makes the BEST Sunshine Salad EVER !!

1 C. Boiling Water --- 1, 3-oz. pkg. Lemon Jello --Pour boiling water over jello, stirring until the jello is dissolved. Stir in cold water, 1/8 tsp. salt and 1 Can Crushed Pineapple in syrup.

Chill until partially set then add 1/2 C. Shredded Carrots and nuts if desired. Makes 6-8 servings
