Salted Peanut Chews

SALTED PEANUT CHEWS

This is a great recipe from Monie Woods, whose boys I had in class at Turkey Run – she sent some one day and oh my gosh, they are delicious

Base:  1 pkg Pillsbury Plus Yellow Cake Mix
1/3 C. Butter, softened
1 Egg

Combine above – mix at low speed until crumbly.  Press in bottom of 9x13 pan.  350 for 12-15 minutes – don’t want it very brown.  Remove from oven and immediately sprinkle with the marshmallows.  Return to oven 1-2 minutes until marshmallows puff.  Take out – cool while making topping.

3 C miniature marshmallows

Topping:  
1/3 C. Karo
¼ C. butter
2 tsp vanilla
12-oz pkg peanut butter chips
2 C. Rice Krispies
2 C. salted peanuts

In large saucepan, heat corn syrup, margarine, vanilla and chips just until melted and mixture is smooth, stirring constantly.  Remove from heat; stir in cereal and nuts – chill and then cut into bars.  Store covered.  Can cool in fridge, then take them out and cut them.
