Rhubarb Cake
"Rhubarb Cake"
I'm really not a big rhubarb fan, but I like this cake. It came from Jeanie Certain in May of 1978 -- is that rhubarb season in Indiana? Must be!! KZ
1 1/2 C. Brown Sugar
1/2 C. Butter 1 tsp vanilla
1/4 C. White Sugar
1 Egg
2 C. Flour
1 tsp. Soda
1 C. Buttermilk
Put 1/2 batter in 13 x 9 pan. Add 1 1/2 C. Rhubarb and top with remaining batter. Top with 1 1/3 C. Sugar and 1 tsp. Cinnamon. Bake 350 degrees for 30-40 minutes. Serve warm with Cool Whip.
