Red Cake
"Red Cake"
Aunt Hulda again! I think she got this at a Christmas Party where she worked -- R.R. Donnelley, in Crawfordsville, Indiana (but, don't quote me on that). Anyway, she HAD to make it for us EVERY Christmas for at least 30 years. I'm kind of ashamed because I've only made it a few times -- I admit I'm into EASY recipes, and this isn't but it is TRULY worth the effort, if you'll just put some out (effort, that is!) KZ.
Note: My sister-in-law does a variation - well, actually a completely different cake recipe beginning with a plain white cake mix, adding the red food coloring and it is better than this one but I'm not sure exactly how to make it.
1 1/2 C. Sugar
1/2 C. Crisco Shortening
2 well-beaten Eggs
Mix this together well.
2 1/2 C. Cake Flour
1 tsp. Salt-- mix together well.
1 C. Buttermilk
1 T. Vanilla -- mix.
2-oz. Red Food Coloring
2 tsp. Cocoa -- mix.
1 T. Vinegar and 1 tsp. Soda - Mix.
Cream shortening and sugar; add eggs. Add flour and buttermilk mixtures alternately. Add coloring mixture and soda/vinegar mixture. Mix well.
Bake in layer pans (oiled & floured) at 350 degrees for 35 minutes.
When cooled completely, make the two layers into four -- this is a little tricky.
I've even put them in the freezer -- they're easier to cut that way.
Icing -- 3 T. Flour 1 C. Milk cook and let get thick. Set aside and cool.
Cream: 1 C. Butter 1 C. Sugar until fluffy. Spoon 1 T. at a time into the cooked mixture and beat. Beat 5-10 minutes until spreading consistencey. Add 2 C. Powdered Sugar a little at a time. This is a very unique eating experience!!!!
