Raw Apple Cake

"Raw Apple Cake"

Kathryn Hallett, one of my favorite "genealogy buddies" gave me this recipe when I visited her on a genealogy quest years ago when I first started researching -- probably about 1969 or 1970.
2 C. Diced Apples, peeled
1 C. Sugar
1 Egg
1 T. Oil
1 tsp. Vanilla

1 C. Flour
1 tsp. Soda
1/2 tsp. Salt
1 tsp. Cinnamon
1/2 C. Chopped Nuts

Mix sugar with apples, let stand until sugar semi liquifies; add egg, oil, vanilla and beat well; add dry ingredients and nuts.

Pour into a 8" square pan. Bake 350 degrees for 40 minutes. Cover immediately with hot sauce below.

Sauce 1/4 C. Brown Sugar 1/4 C. White Sugar 1 T. Flour 1/2 C. Water Cook until clear; then add: 2 T. Butter 1/2 tsp. Vanilla. Mix well! Pour over HOT cake!
