Porcupine Meatballs



PORCUPINE MEATBALLS
Combine:

1 # ground beef
½ C Instant Rice
½ C. Water
1/3 Cup finely chopped onions
Garlic salt (or a couple of cloves of garlic whichever you prefer)
Salt/Pepper to taste

Add the above together and mix- well. Shape into meatballs (1 ½” or so round).

1 ½ T. Oil – heat in a large skillet, then add the balls and brown thoroughly.
When browned, put the meatballs in a nice glass baking dish (I always spray it with Pam)

15 ounces tomato sauce (or I have also used Tomato Soup)

Also add either some tomato juice (1/4-1/2 C) OR ¼-1/2 C. Beef Broth or you could add both I guess

3 T. Brown Sugar

2 T. Worcestershire Sauce if desired

Mix the sauce and pour over meatballs. Bake 350 for 40-45 minutes – can serve over rice, mashed potatoes, pasta, and we love it over cooked cabbage … or just eat ‘em alone ! YUM!!!
