Pancakes & Waffles

By Becky Neideffer – this was her mother’s (Mrs. Clyde M. Spencer) recipe
2 C. Flour
2 T. Sugar
1 tsp. salt
3 tsp. baking powder
1 ¾ C. Milk
4 T. melted butter or margarine
2 eggs, separated
Sift dry ingredients together into mixing bowl. Add egg yolks and milk slowly, beating until batter is smooth. Add melted butter and fold in stiffly beaten egg whites. Fry on hot griddle.
