Oatmeal Cake
"Oatmeal Cake"
We used to own a restaurant and one of our cooks brought the ingredients three different times in one evening for me to make him an oatmeal cake, so hey, this cake's gotta' be good, huh? But, again, I didn't write down where I got the recipe. It may have been from my husband Jim's grandmother, Sarah "Alice" Thompson Kritz. I remember she loved it, anyway.
1 1/2 C. boiling water
1 C. Quick oatmeal ---- let stand.
Cream: 1/2 C. Shortening
1 C. Brown Sugar
1 C. White Sugar
2 eggs, beaten.
If oats are soft, mix these mixtures together.
Then add: 1 1/2 C. Flour
1 tsp. cinnamon
1 tsp. soda
1/2 tsp. salt
Bake at 350 degress for 30 minutes -- DO NOT OVERBAKE.
Icing -- 1 C. White Sugar 3 beaten egg yolks 1 C. Carnation Milk 1 stick butter Bring to boil. Take off and add: 1 tsp. vanilla; 1/2 to 1 C. Nuts and 1/2 C. Coconut.
This cake reminds you of German Chocolate Cake. And, by the way, I'm eating a piece of it as I type!! Wish you were here, don't you????
