Microwave Peanut Butter
Microwave Peanut Brittle
1 C Sugar ½ C. White Corn Syrup
1 C shelled, roasted, salted peanuts
1 tsp baking soda
In 1 ½ qt casserole dish, stir sugar and syrup together. Cook 4 minutes on HIGH. Add peanuts. Cook 3-5 more minutes on HIGH until it is light brown. (this will depend on the microwave – if powerful (Amana for instance) 3 minutes will do it but others might need 5. Remove and add the soda. Stir gently until foamy. Spead on greased cookie sheet – 1# (St. Joseph Altar Society, Universal, Indiana)
