Mexican Delight

Mexican Delight
- I couldn't really find anything that looked right but this is similar - now, I'm going to have to find this recipe - lol

Not sure where I got this from, but have a “family” tale.  My dear departed cousin, Frank, hates Mexican food. He came in one day and asked what the delicious smell was.  I fixed him a plate before I told him the name.  This of course, could be spiced up but I only like it because it’s very mild.

1# Ground Beef ½ C. Water 1 small onion, chopped
1 green pepper, chopped 3 stalks celery, chopped
2 T. Flour ¾ C. Ketchup 2 T. Chili powder
Salt to taste 1 C. Mushrooms

Cook sauce – can be frozen.  Brown meat – drain fat. Add water, onion, pepper, celery, mushrooms and add flour.  Stir in ketchup, chili powder and salt. Stir and let simmer until celery is cooked 1 ½ - 2 hours (I cook this in an electric skillet).  
Layer Following – corn chips -  sauce  -- grated cheese  -- lettuce – tomatoes – onions – black olives, if desired and just pile it all top of each other. A fun meal and soooo delicious!
