Lemon Squares
"Lemon Squares"
I got this recipe from Patti Zimmerman, a friend, and my old (and fabulous -- wish everyone could have one like her) boss, Mary Bishop. They both made GREAT lemon squares and now you can, too!!!!!!
Preheat Oven to 350 degrees.
In Mixing Bowl, Blend thoroughly:
1 C. Flour
1/2 C. Butter
1/4 C. Powdered Sugar
Press in 8 x 8 x 2 pan.
Bake 20 minutes at 350 degrees.
In a mixing bowl, beat:
2 Eggs
1 C. Sugar
1/2 tsp. baking powder
1/4 tsp. salt
2 T. Lemon Juice
Pour over crust and bake 20-25 minutes more (but DO NOT overbake). These are melt in your mouth treats!!!!
