Lemon Cake

"Lemon Cake"

This is another recipe I received from my wonderful mother-in-law and since it's dated 1968, the year I was married I either got it at my wedding shower (they were to bring a recipe) or at least the first year of wedded bliss!!!! By the way, Jim Zach and I have been married 48 years (as of Jan 13, 2016) and it's still blissful!! KZ
1 Lemon Cake Mix (Duncan Hines)
1 pkg. instant lemon pudding
3/4 C. Oil
3/4 C. Water
4 Eggs

Beat together.

Bake in 13 x 9 pan 350 degrees for 35 minutes.

When cake is baked and STILL HOT, punch holes all over the top (I use a knife)

MIX : 2 C. Powdered Sugar
1/3 C. Lemon Juice
2 T. Water
2 T. Melted Butter

Pour this over the cake -- it will seep down into the holes and is a VERY moist cake and lasts a long time -- it was nice for just the two of us (before our two munchkins came along) since it stays good several days and now that we're old and it's just the two of us again, it's still a great cake to make.
