Johnnycake
From the: Montgomery County Genealogy Society Cook Book 1975
Johnnycake
1 Cup Flour
1 tsp. salt
1 Cup Yellow Cornmeal
2 beaten eggs
3/4 Cup Milk
4 Tablespoons shortening
2 teaspoons baking powder
1/3 Cup Sugar
Sift dry ingredients. Combine eggs and milk and add to flour mixture.
Add shortening last.
Bake at 400 degrees for 1/2 hour in a 9x 9 pan.
Submitted by Karen Zach (yours truly with a note about one of hub's Jim's relatives) - Jim's great, greant aunt was said to have made such a huge Johnnycake on the 4th of July in the 1800s that it took a team of 8 horse to take it to the celebration. This recipe is more your size !
