Jam Cookies
"Jam Cookies"
This recipe came from a REALLY NICE LADY whom I met when our children were in Scouts together. She died very young but I liked her so much -- I think of her EVERY time I make these -- her name was Sharon Williams.
I used strawberry jam, since I made it homemade which made these DELICIOUS, EASY cookies even better!!
Note: Although I don't make homemade strawberry jam anymore, Smuckers is very good, as well. I've also made these with apricot, peach and blueberry jam and they're all great !!
Combine in a mixing Bowl:
2 C. Oats
1 3/4 C. Flour
1 C. Brown Sugar
1 C. Melted Butter
3/4 tsp. salt
1 tsp. cinnamon (I use more than this probably a T.)
1/2 tsp. soda.
Press 1/2 mixture in pan
Pour jam over top
Add: Remaining mixture on top
Bake for 20 minutes at 350 degrees.
