HOE CAKE – by Rebecca Neideffer

“When my great great grandmother, Elizabeth Newgent settled in Clinton Township, Putnam County, Indiana in 1825, she was very popular with the local Potawotamie Indians for her hoe cake. When the Indians helped the family in any way, they demanded all payments in generous helpings of this hoe cake.

Moisten salted corn meal with scalding water and/or milk.  Allow it to stand for an hour. Put two or three teaspoons of this on a hot greased griddle. Smooth it out to make cakes one-half inch thick and let it cook. When one side is done, turn over and brown the other. Serve very hot. Goes well with sausage and syrup.
