Graham Cracker Petit Fours

"Graham Cracker Petit Fours"

This again is my mother-in-law's recipe -- I got it from her New Years' 1976. My son LOVES these -- of course, he loves anything with graham crackers. This is a unique cookie -- I think one you would either LOVE or HATE. Begin this a day in advance!
Preparation: Mix and set aside: 1 C. Graham Cracker Crumbs (14-16 graham crackers) 1 C. Coconut 1 C. Chopped Pecans

Have ready a stack of Graham Crackers on the side.

Prepare in sauce pan, and set aside:

"Icing" 2 C. Sifted Powdered Sugar 1/2 C. melted Butter 3 T orange juice concentrate lemon juice (1/2 tsp)

The Process: First: Line 13 x 9 pan -- ungreased with whole Honey Grahams!

Melt in Double Boiler: 1 C. Butter 1 C. Sugar

Mix: 1 Egg, slightly beaten 1/2 C. milk -- Add to butter and sugar and cook in double boiler until blended and comes to a boil.

Remove from doubleboiler and add: 1 C. Graham Cracker Crumbs (14-16 graham crackers) 1 C. Coconut 1 C. Chopped Pecans

While hot, pour over graham crackers in pan.

Immediately add another layer of graham crackers and press lightly into hot mixture. Spread more mixture over graham crackers.

REFRIGERATE OVERNIGHT. Cut in 1" squares. Makes 90-100. Since this makes so many, it's a real nice treat for a party (especially a wedding shower or anniversary).
