Gooey Caramel Pecan Cake
1 Box Betty Crocker Super Moist Devils Food Cake Mix.
Water, Vegetable oil and eggs called for on cake mix box
20 caramels, unwrapped
½ C Butter (or Margarine)
1/3 Cup Shipped Cream
1 C Chopped pecans, toasted
1 container Better Crocker
Whipped Chocolate frosting
Heat oven to 350. Grease & flour 2, 8x8 or 9x9” round cake pans or spray . In a 1-quart saucepan, heat caramels, butter, whipping cream over medium high six or so minutes until caramels are completely heated and mixture is smooth add pecans (stir in) Cool 30-45 minutes or until firm enough to spread without running over edge of cake. On a serving plate, place 1 cake layers round side down. Spread with 1 C of pecan filling. Top with second cake layer, Frost top and sides with frosting. Spread remaining filling on center of cake to withing 2-3 “ of edge. Store loosely covered.
