Fancy Cupcakes

"Fancy Cupcakes"

This recipe came from my husband's mother (well, I consider her MY mother, too), JoAn Kritz Zach at Christmas 1975!

Melt 4 squares semi-sweet chocolate and 1/2 lb. butter; add 2 C. pecans, stir until well coated.

In mixing bowl, combine 1 3/4 C. Sugar; 1 C. Flour and 4 large beaten eggs.

Blend, but do not beat.

Stir chocolate and pecan mixture into this and stir in 1 tsp. vanilla.

Fill muffin tins until completely full. Bake at 325 degrees for 35 minutes; cool 8-10 minutes before removing.
