Carrot Cake

I’ve tried MANY Carrot Cake recipes – this is the veruybest 😊  ENJOY!

CARROT CAKE


2 C. Sugar
2 C. Flour
2 tsp Cinnamon
2 tsp Soda
2 tsp Baking Powder
1 tsp Salt
Sift together then add:
1 C. Oil
4 unbeaten eggs
¾ C. Nuts
3 C. Finely shredded carrots.
Mix and bake at 350 in 13 x 9 pan for 20-35 minutes (don’t overbake)

ICING
8-oz Cream Cheese
¼ C. Butter
3 C Confectioner’s Sugar
1 tsp. Vanilla – if needed, add few drops milk to make it spreadable or more sugar to thicken.

Note: Cake freezes well
