Caramel Apple Cupcakes
CARAMEL APPLE CUPCAKES

1 box Betty Crocker Super Moist Butter Recipe yellow cake mix
Water, Butter and eggs called for on cake mix box
1 C. Chunky applesauce
1 T Apple Pie Spice
25 caramels, unwrapped
2 2 T half-and-half
12 C Finely chopped peanuts
Heat over to 325. Place paper baking cup in each of 18 regular-size muffing cups.
Make cake mix as directed on box using water, butter and eggs, gently stir in applesauce and apple pie spice. Divide batter evenly among muffin cups.
Bake 17-22 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes remove from pans to cooling racks. Cool completely about 30 minutes.
In small microwavable bowl microwave caramels and half and half uncovered on High 2-3 minutes, stirring ever 30 seconds or so, until melted and smooth. Cool about 10 minutes to thicken slightly. Dip tops of cupcakes into caramel mixture, spring with peanuts, store covered in refrigerator.
