Brownies

"Brownies"

I received this recipe from my old boss and good friend, Mary Bishop. She was the Director of the Crawfordsville Public Library when I was the Children's Librarian and she would make SOMETHING (our favorite request was this or the Lemon Squares -- see below) for each employee's meeting -- hey, we loved going to meetings -- can you say that????

These brownies are like none you've ever made before and pretty easy to make -- try 'em, you'll like 'em -- GUARANTEED!!!
DELICIOUS BROWNIES

Prepare: 11 x 15" greased jelly roll pan.

MIX: 1 1/2 C. Flour
1 C. Vegetable Oil
1 tsp. Salt
4 Eggs
2 C. Sugar
1/4 C. Water
1/2 C. Cocoa
2 tsp. Vanilla

Pour into pan, and sprinkle: 1/2 C. Pecans

Bake 350 degrees for 20-25 minutes.

"Icing" -- Mix: 2 C. Powdered Sugar 2 T. Cocoa 2 T. butter (melted) 2-3 T. milk. Spread over brownies while still warm. Cut into squares while cool.


FUDGY CHOCOLATE CHIP TRUFFLE Bars - 350

I got this awesome recipe from my sister-in-law who is a GREAT book and even more GREAT sis and friend

1/2 C Butter, melted
2 C. Graham Cracker Crumbs
1 Bag  (8-oz) toffee bits ( 1 1/2 C)
1 pkg. chocolate chip cookie dough (16.5 oz)
1 Bag (12-ox semi sweet chocolate chips
1 Can Sweetened Condensed Milk
1 T. Butter
1 tsp Vanilla

Grease bottom of 9 x 13" pan.  
Stir 1/2 C. Melted butter
1 1/2 C Cracker Crumbs
3/4 C of Toffee bits
Press this mixture evenly over the bottom of the pan.
Refrigerate about 15 minutes or until firm.

Meanwhile let cookie dough stand at room temperature - about 10 minutes to soften.

In a 2-quart sauce pan beat chocolate chips, milk & 1 T. butter over medium heat, stirring frequently until chips are melted.  Remove from heat, stir in vanilla.

Spread  mixture over cracker crumbs crust.  In a medium bowl break-up cookie dough.
Mix in remaining 1/..2 C. Cracker crumbs until well blended.  Crumble mixture over chocolate layer.  Sprinkle with remaining 3/4 C Toffee bits.

Bake 25-46 minutes or until golden brown.  Cool 2 hours
