Banana Cupcakes

BANANA CUPCAKES

Recipe of Mae Trueman Lape contributed by Beth Rasmussen. Mae was Beth's aunt.
1 1/2 c flour
1 tsp baking powder
1 c sugar
1/2 c shortening
2 eggs
1 c mashed ripe bananas
4 T sour milk
3/4 tsp soda
1 tsp vanilla
Mix and bake in muffin pans with liners at 300 deg. until golden brown. If you want to make loaves a double batch makes 4 small loaves.

VANILLA WAFER CAKE

2 sticks margarine
2 cups sugar
6 whole eggs
1- 12oz box vanilla wafers
1/2 c milk
1- 7 oz pkg flaked coconut
1 cup pecans (chopped)
Cream margarine and sugar. Add eggs one at a time and beat after each. Crunch the vanilla wafers and add alternately with milk. Add coconut and pecans. Bake in greased and floured tube (bundt) pan. 325 deg for 1 hr and 15 min. or till it tests done with a toothpick.

"Grandma Trueman always made her pancake batter at night. She cleaned her kitchen and set the table for the next morning. Then it wasn't so hard to get breakfast for everyone. She made yeast pancakes and this is a recipe very similar to what she made. "
Stir in mixing bowl: ½ c. warm water 1 Tbl honey, molasses or sugar 1 to 3 Tbls, packages or cakes bakers yeast Let stand 5 minutes or longer, add: 1 cup milk, buttermilk or yogurt 2 Tbls veg. oil 2 eggs ½ c. wheat germ Sift into liquid: 1 cup whole wheat flour 1tsp salt ½ c powdered milk Stir and cook. If 3 TBLSP of yeast are used, stir and cook right away. If 2 TBLSP of yeast are used, let rise in a warm place for 30 minutes. If 1 TBLSP of yeast is used, then let it sit overnight. (This is what Grandma Trueman did according to my mother.) However, no matter how much yeast you use, taste is the same.
Grandma Trueman would be Martha Lorena (Mattie) Leach Trueman. She was born in New Albany, Indiana but lived in Danville and Veedersburg. She was married to Henry Benjamin Trueman.
