Auntie's Pineapple Upside Down Cake

This is another of my Aunt Hulda's great recipes and one of my fav cakes!!! My grandmother, Hazel Morgan Smith, also made this cake, so I assume Aunt Hulda got it from her recipe file. I calculate this being over 55 years old. KZ

2 Eggs -- beat 5 minutes.
Gradually add 2/3 C. Sugar

Beat in (all at once) 6 T. Pineapple Juice plus 1 tsp. Vanilla.

Add (all at once) 1 C. Flour and 1/3 tsp. Baking Powder and 1/4 tsp. Salt.

Melt 1/3 C. Butter in 10" skillet or baking dish. Sprinkle 1/2 C. Brown sugar evenly over butter and arrange fruit (pineapple rings and a marachino cherry in the middle of each) - make batter and pour over fruit.

ake at 350 degrees for 45 minutes -- immediately turn upside down onto a serving platter. -- DO NOT REMOVE FROM PAN FOR A FEW MINUTES. Lift pan off cake when it has set a few minutes.
