Angel Food Cake

"Angel Food Cake"
I got this cake from my Aunt Hulda Smith. I used to think I was big stuff when a child, helping her use the wire beater -- in other words, this is a bit hard to make, but WELL WORTH THE EFFORT!!!!!!!! KZ

Use wire beater for all of cake and have eggs at room temperature.

Sift: 1 C. Cake Flour and 1 C. Confectioner Sugar 7 times

Sift: 1 C. Granulated Sugar 4 times (different bowl)

Beat: 12 large Egg Whites (large bowl).
When foamy add: 1 1/4 tsp. Cream of Tartar
1/4 tsp. salt Beat until whites hold their shape -- about 7 minutes.

Add granulated sugar 1 T. at a time.

Add flour/sugar mixture 1 T. at a time.

Add 1 T. Fresh Lemon Juice

Pour in unoiled tube pan.

Bake at 325 degrees for 45-50 minutes.

Icing (absolutely amazing)

1/3 C. Butter
1 1/2 tsp. vanilla
1 egg yolk
1 # Confect. Sugar
3 T.

Milk Mix butter, vanilla, yolk until well blended. Add sugar alternately with milk. ENJOY!!!!!!!!!!!
