Abby's Pecan Pie
ABBY’s PECAN PIE (Abigail VanBuren – yep, Dear Abby)
Note: this was a specialty of the Phoenix Hotel in Lexington, Kentucky and Abby begged it off the Pastry Chef and here it is
Mix: 1 C. White Corn Syrup – 1 C. Dark Brown Sugar – 1/3 tsp salt – 1/3 C. Melted butter - 1 tsp vanilla.
Mix in 3 slightly beaten eggs.
Pour into 9” unbaked pie shell. Sprinkle 1 heaping cup of pecans over filling.
Bake 350 approximately 45 minutes.
